  • Recipe:Welsh Rarebit
  • Description: A simple and traditional Welsh recipe for the children to cook and enjoy. You will need a grill.
  • Preparation Time: less than 5 minutes
  • Cooking Time: less than 5 minutes
  • Ingredients: 4 slices of bread
    1 oz butter
    1 level teaspoon English mustard (use less if using mustard powder)
    pinch salt
    A quick shake of Cayenne pepper
    Dash of Worcestershire sauce (soy sauce makes a good substitute)
    6 to 8 oz Cheddar or other hard cheese
    2 tablespoons milk (approx, depends on the cheese)
  • Cooking Method: Grate the cheese into a bowl.
    Put the butter into another bowl and beat it until it is soft.
    Stir in the mustard, salt, Cayenne pepper, sauce and cheese.
    Gradually add the milk, a spoonful at a time, and mix well.  The mixture should be soft, but not runny.
    Lightly toast the bread on one side only.
    Spread the cheese mixture onto the uncooked side of the toast
    Return to the grill and toast until the cheese bubbles, and browns.  Do not overcook.

    Serve
    Piping hot, all on its own for a light lunch, tea or supper.
